Creamy Egg Risotto

2 eggs
125 mL (1/2 cup)fat free plain cheese or smooth texture cottage cheese (.08 M.F.)
75 mL (5 tbsp)water
1 pouch (33 g) single serving creamy chicken noodle instant soup mix
250 mL (1 cup)cooked long grain rice
Sprig of fresh parsley of chopped fresh chives

METHOD

WHISK eggs with fresh cheese, water and soup mix. Set aside. PLACE rice in medium saucepan. POUR in egg mixture. Heat over medium-low heat. COOK and stir constantly for 5 minutes or until mixture is thick and creamy. Garnish with chives. SERVE immediately.
